Loaded Chicken Nachos

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1 bag tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 jalapeño pepper, sliced (optional)
  • 1 avocado, diced
  • ½ cup diced tomato
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream
  • 1/4 cup salsa

Directions:

  • Preheat oven to 375°F (190°C).
  • In a small bowl, mix together the olive oil, chili powder, cumin, salt, and pepper.
  • In a large bowl, toss the cooked and shredded chicken with the spice mixture.
  • Layer the tortilla chips on the bottom of a large baking dish.
  • Sprinkle the chicken over the chips, followed by the cheddar cheese and Monterey Jack cheese.
  • If desired, add sliced jalapeños on top.
  • Bake for 10-12 minutes, or until the cheese is melted and bubbly.
  • Remove from oven and top with diced avocado, diced tomato, chopped cilantro, sour cream, and salsa.
