Loaded Chicken Nachos
Ingredients:
1 lb boneless, skinless chicken breasts, cooked and shredded
1 tbsp olive oil
1 tsp chili powder
1 tsp cumin
Salt and pepper, to taste
1 bag tortilla chips
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 jalapeño pepper, sliced (optional)
1 avocado, diced
½ cup diced tomato
1/4 cup chopped cilantro
1/4 cup sour cream
1/4 cup salsa
Directions:
Preheat oven to 375°F (190°C).
In a small bowl, mix together the olive oil, chili powder, cumin, salt, and pepper.
In a large bowl, toss the cooked and shredded chicken with the spice mixture.
Layer the tortilla chips on the bottom of a large baking dish.
Sprinkle the chicken over the chips, followed by the cheddar cheese and Monterey Jack cheese.
If desired, add sliced jalapeños on top.
Bake for 10-12 minutes, or until the cheese is melted and bubbly.
Remove from oven and top with diced avocado, diced tomato, chopped cilantro, sour cream, and salsa.
