Ken's Famous Cheesecake

Ingredients:

Crust:

  • 1 ½ cups of honey graham crackers (1.5 packs)
  • ½ cup sugar
  • 6 tablespoons melted butter

Cake:

  • 3 each 8oz packages cream cheese
  • 3 eggs
  • ¾ cups sugar
  • 1 teaspoon vanilla extract

Topping:

  • 1 cup sour cream
  • ¼ cup sugar
  • 1 teaspoon almond extract

Fruit Glaze:

  • ½ cup Sugar
  • 1 ½ cups Fruit Juice
  • Corn Starch or Ultra Gel
  • 2 Tbsp. Corn Syrup
  • Fruit of choice

Important Notes: All cake ingredients must be at room temperature for a smooth batter consistancy. Let cake cool before cutting.

Directions:

Crust:

  • Set oven to 350 degrees.
  • Put graham crackers and sugar in food processor and pulse until fine.
  • Add melted butter and pulse until incorporated.
  • Put in spring form pan and evenly distribute on bottom and halfway up sides.
  • Bake for 10-12 minutes.
  • Remove and let cool for 15 minutes.

Cake:

  • Set oven to 375 degrees
  • Put eggs, sugar and vanilla extract in food processor, pulse until smooth.
  • Add cubed cream cheese and pulse until smooth.
  • Add mixture to crust pan.
  • Bake for 30 minutes
  • Remove and let cool for 15 minutes.

Topping:

  • Keep oven at 375 degrees.
  • Put sour cream, sugar and almond extract in a bowl mix until incorporated.
  • Pour over top of cake evenly and bake for 8-10 minutes
  • Once cooled add fruit of choice and glaze.

Fruit Glaze:

  • Mix cornstarch OR Ultra Gel and 3/4 c. fruit juice** in a separate small bowl, stir until dissolved.
  • Mix sugar and 3/4 c. fruit juice together in a medium saucepan and bring to a boil.
  • Add cornstarch/fruit juice mixture to boiling sugar/fruit juice, reduce heat and cook until mixture thickens and is turning clear, stirring constantly.
  • Add corn syrup and cook for 1 minute.
  • Cool fruit glaze slightly and then drizzle, lightly brush, or "paint" onto fruit.
