Cheesy Chicken and Spinach Stuffed Shells

Ingredients:

  • 1 ½ - 2 cups pasta sauce (bottled or homemade)
  • 30 jumbo shells
  • 9 x 13 baking dish
  • Shredded mozzarella and parmesan cheese for topping

Filling

  • 2-3 Tbsp Olive oil
  • 4 cups spinch (lightly packed)
  • 1 small onion
  • 2 eggs
  • ½ cup shredded Parmesan cheese
  • ½ cup mozzarella, shredded or diced
  • 15 oz ricotta
  • 1 tsp oregano
  • 1 Tbsp basil
  • 1 ½ cups shredded or diced roasted chicken
  • salt and pepper to taste

Directions:

  • Cook shells al dente, strain and set aside.
  • In a medium to large saucepan add olive oil.
  • Saute onions and then saute spinach. Set aside to cool.
  • In a large bowl add all filling ingredients and mix thoroughly including onions and spinach.
  • Spray the baking dish with cooking spray and add pasta sauce.
  • Fill each shell and place in the sauce.
  • Top with shredded cheese or fresh diced mozzarella.
  • In a 350 degree oven bake covered for 20 minutes.
  • Remove cover/foil and bake for another 20 minutes or until cheese melts and sauce is bubbly.
  • Let cool for 10 minutes before serving.
