Ken’s Famous Cheesecake




1 ½ cups of honey graham crackers (1.5 packs)

½  cup sugar

6 tablespoons melted butter



3 each 8oz packages cream cheese

3 eggs

¾ cups sugar

1 teaspoon vanilla extract



1 cup sour cream

¼ cup sugar

1 teaspoon almond extract




  1. Set oven to 350 degrees
  2. Put graham crackers and sugar in food processor and pulse until fine
  3. Add melted butter and pulse until incorporated
  4. Put in spring form pan and evenly distribute on bottom and halfway up sides
  5. Bake for 10-12 minutes
  6. Remove and let cool for 15 minutes


  1. Set oven to 375 degrees
  2. Put eggs, sugar and vanilla extract in food processor, pulse until smooth
  3. Add cubed cream cheese and pulse until smooth
  4. Add mixture to crust pan
  5. Bake for 30 minutes
  6. Remove and let cool for 15 minutes


  1. Keep oven at 375 degrees
  2. Put sour cream, sugar and almond extract in a bowl mix until incorporated
  3. Pour over top of cake evenly and bake for 8-10 minutes
  4. Once cooled add fruit and Glaze

Ingredients for the Fruit Glaze:

  • 1/2 c. Sugar
  • 1 1/2 c. Fruit Juice
  • Corn Starch or Ultra Gel *See Below
  • 2 Tbsp. Corn Syrup

Fruit Glaze:

  • Mix cornstarch OR Ultra Gel and 3/4 c. fruit juice** in a separate small bowl, stir until dissolved.
  • Mix sugar and 3/4 c. fruit juice together in a medium saucepan and bring to a boil.
  • Add cornstarch/fruit juice mixture to boiling sugar/fruit juice, reduce heat and cook until mixture thickens and is turning clear, stirring constantly.
  • Add corn syrup and cook for 1 minute.
  • Cool fruit glaze slightly and then drizzle, lightly brush, or "paint" onto fruit.

*Important notes

  1. All cake ingredients must be at room temperature for a smooth batter consistancy.
  2. Let cake cool before cutting.
